I have had this dish often. A good friend from Spain gave me this years ago found it on my "Tomato"CD. I have toasted French bread with this with butter, garlic and chili powder spread.

Ingredients
  • 3 cups water
  • 1/2 cup white wine
  • 1-1/2 lb. ripe tomatoes, cored and cut into thick wedges
  • Salt and freshly ground black pepper
  • 1/4 cup evoo
  • 1 medium onion, minced
  • 1 Tbsp. minced garlic
  • 1 Tbsp. tomato paste
  • Large pinch saffron threads
  • 2 tsp. Spanish pimento (paprika)
  • 2 cups Spanish rice or (arborio works very well)
  • 1/2 lb. shrimp, cleaned
  • Minced parsley and basil for garnish.

Directions
  1. Preheat oven to 450*F.
  2. Warm water in a saucepan.
  3. Put cut tomatoes in a medium bowl, sprinkle with salt and pepper ans drizzle them with 1 Tbsp. olive oil.
  4. Toss to coat.
  5. Put remaining oil in a 12" oven proof skillet over medium-high heat.
  6. Add onion and garlic, sprinkle with salt and pepper, cook stirring occasionally until vegetables soften 3 to 5 minutes.
  7. Stir in tomato paste, saffron and paprika cook for 1 minute.
  8. Add rice and cook Stirring occasionally until it is shiny.
  9. Add wine and let simmer until it is mostly absorbed.
  10. Add shrimp and stir to combine.
  11. Add hot water ans stir until just combined.
  12. Put tomato wedges on top of rice and drizzle with juices that accumulated in the bottom of bowl.
  13. Put pan in oven and roast undisturbed for 15 minutes.
  14. Check to see if rice is dry and just tender.
  15. If not return pan to oven for another 10 minutes.
  16. When rice is ready turn off oven and let pan set for 5 to 15 minutes.
  17. Remove pan from oven and sprinkle with parsley and basil
