Southwestern Cheese Dip Recipe
This cheese dip is a great party food. Serve with tortilla chips and sour cream on the side! I also serve a side bowl of lime wedges and the side.

Ingredients
  • 2 lbs Velveeta, cubed
  • 1/2 stick of butter
  • 1 green bell pepper
  • 3 cloves minced garlic
  • 1 onion, chopped
  • 2 cups diced (cut into small pieces or shredded)cooked chicken
  • 1 can chopped green chilies
  • 1 package mild taco seasoning
  • 1 1/2 cups mild or medium chunky style salsa
  • juice from 2 limes

Directions
  1. Cook onions, garlic, and bell pepper in butter until tender.
  2. Place all ingredients in crock pot and cook on high heat for 15 minutes.
  3. Lower heat and cook until cheese is melted.
  4. Serve with favorite chips and side of sour cream.
  5. Extra limes on the side if desired.

Skip the chips, gimme a spoon! This sounds really good with the chicken. I've had a variation of this only using ground beef & sausage and goes by the name 'road kill'. thanx for sharing

Anything with cheese in it has to be good! *grin*


I, too, can eat this stuff with a spoon - chips, fries, celery sticks (to make it healthy)..I can't think of anything that wouldn't go good with this!
