How to make it

  • Beat eggs in mixing bowl until fluffy.
  • Add milk, vanilla, and melted butter.
  • Stir in dry ingredients.
  • Drop by 1/4 cupfuls on to greased griddle over medium high heat.
  • Put a layer of bananas slices on pancake (not touching or overlapping). Flip when top is covered by popped air bubbles. Remove when golden brown on both sides. Serve with butter and syrup.

    I have never tried to use the batter for waffles. Waffles and I never have gotten along. Try it and let me know if it works. Someone else has asked me this too. I have thrown out both regular and Belgin waffle irons.

    LOVE banana pancakes - sometimes I just spread them with Nutella and forget the syrup...they're good any way you serve them, and this recipe sounds delish - thank you!
