Ingredients
  • 1 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 can pumpkin pie filling
  • Cake:
  • 3/4 cup light brown sugar
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 2 eggs
  • 1 cup vegetable oil
  • 1-1/2 cups milk

Directions
  1. For cake stir together first 5 ingredients in a large mixing bowl.
  2. Add last three ingredients and beat until mixed well.
  3. For cobbler combine brown sugar, cinnamon, nutmeg and pie filling.
  4. Spread on bottom of pan then pour cake over top.
  5. Bake at 350 for 40 minutes.

This sounds fantastic! I love pumpkin but never had it this way so I am eager to try this one.


I wonder if I could OD on pumpkin? I haven't yet, but I gotta be close. I think my skin is turning orange. I might need a 12 step program. Thanks for enabling me. L.
