Kasha And Onions Recipe
I am not Polish but my Father and Mother-in-law are. Kasha is a grain that is typically enjoyed in Poland. My Father-in-law loves when I prepare it and for him I make gravy to drizzle over the top.

Ingredients
  • 1 heaping cup of Kasha
  • 1 large egg, beaten
  • 2 cups boiling beef bouillon or vegetable stock
  • 1/2 tsp. Vegeta Seasoning
  • salt and pepper to taste
  • 1-1/2 Tbsp. butter or margarine
  • 2 Tbsp. olive oil
  • 1 onion chopped
  • 1 celery rib, peeled and finely chopped
  • 3 cloves garlic, minced or finely chopped
  • 1 heaping Tbsp. parsley flakes

Directions
  1. I saute the onion and garlic in a small amount of olive oil and butter.
  2. Once the onion has reached the soft, translucent stage, add the kasha.
  3. Heat the kasha, then add the beaten egg and mix quickly.
  4. Combine the onion, celery, garlic, parsley flakes and Kasha.
  5. Cook in a heavy saucepan over moderate heat for about 2 minutes.
  6. Add the beef bouillon or vegetable stock, salt and pepper to taste.
  7. Note: I do not add extra salt as I find the beef broth has enough.
  8. Cover, cook over low heat until kasha is tender and most of the water is absorbed, about 15-20 minutes.
  9. Keep the saucepan covered and allow to sit for 10 minutes.
  10. Makes approximately 4 servings.
