I needed to make dinner in a hurry one cold evening when I didn't have much on hand, so I came up with this spicy, flavorful soup. My kids ask me to make it often.

Thanks Keri, this was a HOT FIRECRACKER of a recipe, hubby loved it, I ate a little and was like---woooo!! But after the burn was gone, yum!!! Kids put their cornbread in it and said it was good. Thanks very much, I had to triple the batch, now there's dinner for tomorrow. I'll make this again. Melissa

YAY! I'm so glad you liked it! The invention was purely a "throw what I have on hand into the pot" kind of recipe and my kids and I loved it, too. I usually use mild enchilada sauce (should have mentioned that in the recipe!), so if you used a spicier version, that's where the burn came from. I'll have to try it with cornbread.

The fact that this recipe was created in a split second, is very impressive - My Mom could do it - I can't lol.

Thanks Neon! You can just use beef flavored boullion instead of the ramen seasoning. I didn't have any boullion, so I just improvised with what I had on hand. I'm not sure of the measurements, but I would guess 1 boullion cube/packet or 1 tsp of granules should be equivalent.
