Asparagus And Toasted Pine Nuts With Lemon Vinaigrette

- 1 pound fresh asparagus spears shopping list
- 3 tablespoons pine nuts shopping list
- 1/4 cup olive oil shopping list
- 1 tablespoon fresh lemon juice shopping list
- 1 clove garlic crushed shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon dried whole basil shopping list
- 1/2 teaspoon dried whole oregano shopping list
- 1 teaspoon freshly ground black pepper shopping list
How to make it
- Snap off tough ends of asparagus then remove scales from stalks with vegetable peeler
- Place spears in a steaming rack over boiling water then cover and steam 5 minutes.
- Transfer to a serving platter.
- Sauté pine nuts in a small skillet over medium heat for 3 minutes then set aside.
- Combine olive oil and remaining ingredients in saucepan then stir with wire whisk to blend.
- Cook over medium heat 3 minutes or until thoroughly heated stirring constantly.
- Pour over asparagus then sprinkle with pine nuts.
- Let stand to room temperature before serving.
