these are a coffee flavored brownie with large white and regular chocolate chunks... I like the fact that they are different... the recipe is from one of the Spirit of Christmas series...

Ingredients
  • 1 cup firmly packed brown sugar
  • 3/4 cup butter
  • 2 TBSP. instant coffee
  • 1 TBSP. hot water
  • 2 eggs
  • 2 TBSP. vanilla
  • 2 cups flour
  • 2 teasp. baking powder
  • 1/2 teasp. salt
  • 4 ounces semisweet chocolate, broken into small pieces
  • 4 ounces white chocolate, broken into small pieces
  • .................................................................
  • I tend to add a little more chocolate chunks!!!

Directions
  1. In medium saucepan .. melt sugar and butter over medium-low heat
  2. dissolve coffee in hot water and stir into butter mixture.
  3. cool to room temperature.
  4. beat eggs and vanilla into butter mixture..
  5. in large bowl... sift together flour, baking powder, and salt
  6. stir the butter mixture into the flour mixture..
  7. fold in the chocolate chunks
  8. pour batter into a greased 8 x 11-inch baking pan
  9. bake in a preheated 350' F oven for 25 to 30 minutes or until light brown
  10. cool in the pan
  11. cut into 1 1/2 - inch squares ( or bigger !)
  12. makes 36 of the small brownies...
