Ingredients
  • 3 Cups Milk
  • 3 Tablespoons Yellow Cornmeal
  • 1/2 Cup Dark Molasses
  • 1 Egg
  • 1/2 Cup Sugar
  • 1 Tablespoon melted Butter
  • 1/2 teaspoon Ground Ginger
  • 1/2 teaspoon Cinnamon
  • salt

Directions
  1. Preheat oven to 300 degrees.
  2. Heat milk in a saucepan and when it come to a boil gradually stir in the cornmeal,using a wire whisk.
  3. Cook,stirring constantly,until slightly thickened.
  4. Stir in molasses.
  5. Beat egg in a large mixing bowl and add sugar,butter,ginger,cinnamon and a pinch of salt.
  6. Pour in the hot mixture,stirring rapidly.
  7. When Thoroughly blended,pour mixture into a greased baking dish.
  8. Bake 1 hour or until a knife inserted in the center comes out clean.

Indian pudding is a staple at our house too. I love the addition of ginger. I'm a sucker for ginger. Good stuff. Have a great weekend.
