Kielbasa Cabbage Soup

- 1 bag of angelhair coleslaw mix - Publix sells a fine shred cabbage mix that we always use shopping list
- 2 carrots, shredded shopping list
- 1 large onion, cut in half and thin slivered as thin as possible shopping list
- 1/2 cup of celery (2 ribs, stringed) chopped shopping list
- 1/2 tsp of caraway seeds shopping list
- 1 full carton of best flavored chicken broth (don't skimp with the cheap stuff, think BAM) shopping list
- 1 ring of fully cooked kielbasa, cut in 1/2 inch chunks shopping list
- 2 unpeeled chopped golden delicious apples shopping list
- 1/2 tsp of pepper shopping list
- 1/8 tsp of salt shopping list
How to make it
- In a large saucepan, saute the coleslaw mix, carrots, onions, celery and caraway seeds in a knob of butter for about 5 - 8 minutes until the veggies are still crisp tender and the caraway is fragrant.
- Add the remaining ingredients.
- Bring to a boil.
- Reduce heat and simmer uncovered for 20 minutes, stirring occasionally.

This soup sounds wonderful! I love cabbage soup but never made it this way so I am putting this one on my short list to try soon.
