How to make it

  • Preheat oven to 350.
  • Butter a 9 inch, 2 inch tall springform pan or similar pan.
  • Combime cheeries, 1 Tbs sugar and water and heat and cook over medium heat about 10 minutes or until tender.
  • Remove from heat to cool.
  • Combine dry ingredients and beat in 3/4 cup sugar and butter until light and fluffy.
  • Add yolks one at a time and add vanilla.
  • Beat whitesa stiff with cream of tarter.
  • Gently fold into batter.
  • Pour batter in pan and top with half the cherry mixture and half of their juice.
  • Reserve remainders to serve with cake
  • Sprinkle top of cherries with remaining 1 Tbs sugar.
  • Bake golden and done, about 50 minutes.
  • Remove from oven and run a small knife around edges of pan.
  • Cool ob rack before loosening.
  • Served with the reserved cherriesand their juice
