Lentil Stuffed Pepppers

- 2 red bell peppers shopping list
- 2 ounces red lentils shopping list
- 1 tablespoon olive oil shopping list
- 1 small white onion finely chopped shopping list
- 2 garlic cloves crushed shopping list
- 2 teaspoons freshly chopped thyme shopping list
- 2 ounces spinach shredded shopping list
- 1/4 teaspoon freshly grated nutmeg shopping list
- 1 ounce cashew nuts finely chopped shopping list
- 1 ounce pitted prunes chopped shopping list
- 2 tablespoons yogurt shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon freshly ground pepper shopping list
How to make it
- Preheat oven to 375 and lightly oil an ovenproof dish.
- Place lentils in saucepan and cover with water.
- Bring to boil then reduce heat and simmer uncovered for 10 minutes then drain well.
- Heat oil in frying pan then add onion and garlic and sauté 5 minutes.
- Remove from heat then add remaining stuffing ingredients and mix well.
- Halve peppers lengthways and remove seeds.
- Stuff peppers with filling then place in prepared dish.
- Cover with foil and bake 30 minutes then serve immediately.
