Ole Timey Easy Country Chicken Pie

- Easy Country chicken Pie shopping list
- 1 1/2 cups good brand biscuit mix shopping list
- 1 teaspoon black pepper shopping list
- 11/2 cups milk or buttermilk shopping list
- 1 stick margarine, melted shopping list
- 2 pound chicken shopping list
- 2 cups chicken broth shopping list
- 1 small onion chopped (optional) shopping list
- 1/2 Cup celery chopped (optional) shopping list
- 1 can cream of chicken soup shopping list
How to make it
- Cook chicken until tender. (Add Optional celery & onion last
- 10 minutes, if used. )
- Remove meat from bones and cut into small pieces.
- Place chicken in greased 9 x 13 inch baking dish.
- In sauce pan, bring to a boil the broth and soup.
- Pour over chicken.
- In a bowl combine biscuit mix, pepper, milk and melted margarine.
- Spoon batter over top.
- Bake at 425° for 25 minutes.
- Serves 6

Lana, you are right. I grew up on Southern Chicken Pot Pie, and only the chicken, the rich broth and the dough or pastry, (my mother made pastry) were used. Occasionally, hard boiled eggs were chopped and added. Vegetables were served separately. <...more
