Re: easy chicken pie..in the southland (way back) they used
mostly the chicken and dough for the pie..(with veggies on the side..Chicken pie was ften 'SUNDAY BEST' ..
I also have another Chicken pie on with all the veggies..(If not..will do one!!)

Lana, you are right. I grew up on Southern Chicken Pot Pie, and only the chicken, the rich broth and the dough or pastry, (my mother made pastry) were used. Occasionally, hard boiled eggs were chopped and added. Vegetables were served separately.
Made a chicken pot pie last night for supper! So delicious. There is nothing like it!

Just saw Paula Dean do this on a recent show. I'll be making these this winter. Recently had a Marie Calender (or however you spell it) and gave it a try--it was aweful!! All dough and hardly any "stuffing". I don't eat the premade stuff too often, but this sure did make me appreciate home made even more!!! Thanks for sharing!!!
