Italian Sausage Polenta Pie Recipe
This recipe was sent to me by a friend many years ago. It is an easy meal to fix on a fall evening.

Ingredients
  • 11/2 lb Italian sausage
  • 1 onion sliced
  • 1 clove garlic, crushed.
  • 1 can (1lb) tomatoes
  • 1 can tomato sauce
  • 3/4 t. salt
  • 1/2 t oregano
  • 1/2 t. sugar
  • 1/2 t basil leaves
  • 1/8 t. pepper
  • 11/2 c cornmeal
  • 3/4 t. salt
  • 1 cup grated cheese
  • 1 T crisco shortening

Directions
  1. Brown sausage and reduce heat.
  2. Cook 15 minutes longer.
  3. In another skillet brown onions in 1 T of shortening.
  4. Halve 6 sausages length wise
  5. Set aside.
  6. Add all but cornmeal, salt and cheese.
  7. bring to boil
  8. Reduce heat and simmer 25 minutes.
  9. Preheat oven to 375.
  10. Combine cornmeal, and 3 cups of water.
  11. Boil til thick
  12. Remove from heat.
  13. Cool 5 minutes.
  14. Layer half of cornmeal mix in 3 qt casserole.
  15. top with half of sausage, half of cheese.
  16. Repeat
  17. Arrange reserved sausage on top.
  18. Bake covered 25 min. uncovered 5.
