How to make it

  • Layer the tomato, mozzarella cheese, and olives in a stack, finishing with a layer of cheese
  • Place each stack under a pre-heated hot hot broiler for 2 - 3 minutes or just long enough to melt mozzarella
  • Drizzle each with Olive oil and vinegar
  • Season with salt and pepper
  • Transfer to serving plates
  • Garnish with basil leaves and serve immediately
