A delicious precursor to any meal. This makes a pretty presentation and is a super combination of flavors. Great for tomato season....enjoy them while you have them! Recipe and photo from The Italian Cookbook

Ingredients
  • 2 Beefsteak tomatoes, thinly sliced
  • 4 1/2 ounces fresh mozzarella cheese, drained, thinly sliced(deli)
  • 12 pitted black olives,thinly sliced
  • 8 basil leaves
  • 1 Tbl Balsamic vinegar
  • 1 Tbl EVOO
  • salt and pepper
  • basil leaves for garnish

Directions
  1. Layer the tomato, mozzarella cheese, and olives in a stack, finishing with a layer of cheese
  2. Place each stack under a pre-heated hot hot broiler for 2 - 3 minutes or just long enough to melt mozzarella
  3. Drizzle each with Olive oil and vinegar
  4. Season with salt and pepper
  5. Transfer to serving plates
  6. Garnish with basil leaves and serve immediately
