Fajita Steak Rolls

- 2 beef top round or flank steaks, about 1 to 1 1/2lbs each, cut 1/4 in thick. shopping list
- 1 tbs olive oil shopping list
- 1 med onion, chopped shopping list
- 1/2 c each green and red bell pepper shopping list
- 2 tbs fresh cilantro, minced shopping list
- 2 cloves minced garlic shopping list
- 2 tbs lime juice shopping list
- 1 jalapeno pepper, seeded and minced shopping list
- 1 can (2oz) chopped green chilies shopping list
- 1 c salsa or picante sauce, divided shopping list
How to make it
- Rub both sides of meat with oil. Combine remaining ingredients except salsa in mixing bowl and blend well.
- Measure out about half of veggie mixture and set aside for later use. Spoon remaining veggie mixture evenly over each steak.
- Roll steaks, beginning at narrow end, jelly-roll fashion and tie with kitchen string.
- Place rolls in stoneware and spoon 1/4 c salsa evenly over them.
- Cover and cook on low for 8-10hours or high for 4-5 hours.
- Meanwhile, stir 1/2 c salsa into reserved veggie mixture. Cover and refrigerate.
- Spoon remaining 1/4 c salsa over beef rolls during last 15 mins of cooking.
- Slice steaks into serving portions and accompany with veggie salsa mixture.
- I like to serve with some rice
