Fajita Steak Rolls Recipe

Ingredients
  • 2 beef top round or flank steaks, about 1 to 1 1/2lbs each, cut 1/4 in thick.
  • 1 tbs olive oil
  • 1 med onion, chopped
  • 1/2 c each green and red bell pepper
  • 2 tbs fresh cilantro, minced
  • 2 cloves minced garlic
  • 2 tbs lime juice
  • 1 jalapeno pepper, seeded and minced
  • 1 can (2oz) chopped green chilies
  • 1 c salsa or picante sauce, divided

Directions
  1. Rub both sides of meat with oil. Combine remaining ingredients except salsa in mixing bowl and blend well.
  2. Measure out about half of veggie mixture and set aside for later use. Spoon remaining veggie mixture evenly over each steak.
  3. Roll steaks, beginning at narrow end, jelly-roll fashion and tie with kitchen string.
  4. Place rolls in stoneware and spoon 1/4 c salsa evenly over them.
  5. Cover and cook on low for 8-10hours or high for 4-5 hours.
  6. Meanwhile, stir 1/2 c salsa into reserved veggie mixture. Cover and refrigerate.
  7. Spoon remaining 1/4 c salsa over beef rolls during last 15 mins of cooking.
  8. Slice steaks into serving portions and accompany with veggie salsa mixture.
  9. I like to serve with some rice
