Italian Coconut Cream Cake

- 1/2 cup butter, softened shopping list
- 1/2 cup vegetable shortening shopping list
- 2 cups sugar shopping list
- 5 egg yolks shopping list
- 1 teasp. vanilla shopping list
- 2 cups flour shopping list
- 1 teasp. baking soda shopping list
- 1 cup buttermilk shopping list
- 1 can ( 3 & 1/2-ounces ) flaked coconut shopping list
- 5 egg whites. beaten stiff shopping list
How to make it
- in large bowl .. beat butter and shortening until smooth
- add sugar, beat until fluffy
- add egg yolks and vanilla beat until smooth
- in small bowl.. combine flour and baking soda
- alternately beat dry ingredients and buttermilk to creamed mixture
- stir in coconut
- fold in beaten egg whites
- spread batter in 3 greased and floured 8-inch round cake pans
- bake in preheated 350' F oven for 25 - 30 minutes or until toothpick inserted in the center of cake comes out clean
- cool in pans for 10 minutes
- remove from pans and finish cooling on wire rack ..
- ice with either your favorite icing or Coconut and Pecan Cream Cheese Icing recipe that will follow..
