  • 16 giant sea scallops patted dry
  • 4 radicchio leaves
  • 4 TBS Bengali flavored oil
  • for the raita
  • 1 cup plain yogurt
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 1 TBS honey
  • 1 TBS chopped fresh mint
  • 1 TBS chopped cilantro
  • 1 TBS diced shallot
  • 1-2 chopped serranos with seeds if you like it hotter.
  • Mix all ingredients in a glass bowl and allow to sit for 4 hrs.

Directions
  1. Heat oil in a frying pan right until it starts to smoke. Add the scallops and cook for 2 minutes on each side. Put four scallops in each radicchio leave and dab 1/2 tsp of raita on each scallop.
