Delicious turkey thighs combined with a delightful medley of vegetables; a real palate soother, and easy to digest. Colorful, and delicious!

Ingredients
  • 2 turkey thighs
  • sage leaves
  • salt and pepper
  • canola oil
  • mushrooms, sliced
  • asparagus spears
  • carrot slivers
  • leeks
  • ΒΌ red sweet red pepper
  • fresh spinach leaves

Directions
  1. Place turkey thighs presentation side down on the grill, on medium high flame
  2. Salt and pepper to taste
  3. Cook for 15 minutes, then give the meat a one-quarter turn to achieve nice grill marks
  4. Cook another 15 minutes, then turn over
  5. Place fresh sage leaves under the non-presentation side, and cook an additional 15 minutes, or until done to your preference.
  6. The veggie medley can be started during the second 15 minute interval of cooking the thighs---
  7. On tinfoil, pour about 3 tbsp canola oil
  8. Add the asparagus spears and leeks
  9. Cook 5 minutes before adding remaining ingredients
  10. Add the mushrooms, peppers, and carrot slivers.
  11. Cook until vegetables are tender.
  12. Serve on a bed of fresh spinach leaves.
  13. Plate, and garnish with a sprig of fresh parsley and several colorful nasturtium flowers. These flowers are edible :+D
