Zuppa Or Italian Wedding Soup Recipe
I have the approximates listed. This is a no fail, absolutely delicious Italian wedding soup. Serve with parmesan cheese. So darn good.

Ingredients
  • 2 chicken breasts with skin on, simmered in a pot of water. Take out breasts, skim off fat from water, cut up chicken and add to the water.
  • MEATBALLS:1/2 lb. chuck
  • ketchup
  • garlic salt
  • onion salt
  • parmesan cheese
  • bread crumbs
  • 1 egg
  • salt and pepper
  • OTHER INGREDIENTS: 2 Tbsp Soup Greens - found in the spice section
  • 1/2 tsp onion salt
  • salt and pepper
  • 2 bouillion cubes
  • 1/4 cup pasta - wedding ring shape or alphabets
  • 1 pkg frozen spinach

Directions
  1. Make tiny meatballs. Put on cookie sheet and bake for 10 minutes at 350 degrees.
  2. To make soup: add meatballs to the broth and chicken.
  3. Add the rest of the ingredients, bring to boil, reduce temp. to simmer and cook for about 35 minutes.
  4. Serve in bowls with parmesan cheese as a topping.
