Reverse Shepherds Pie Recipe
Simple, off the cuff version, for when I don't feel like peeling, cubing, boiling, and mashing potatoes. Barefoot Contessa it's not, but it's pretty yummy. I know it's yummy when my son eats it quickly.

Ingredients
  • rice (1 cup)
  • ground beef (2 packages)
  • sea salt
  • ground pepper
  • dried basil (about a palm-ful)
  • 2 small cans of garlic and herb-flavored tomato sauce
  • fresh parsley, chopped (about half a cup)
  • parmesan cheese
  • french-fried onions (optional)

Directions
  1. cook the rice with a little bit of butter.
  2. while the rice is cooking, brown ground beef in a skillet, seasoning it with salt and pepper.
  3. once meat is browned, drain it and return it to low heat.
  4. add the two cans of tomato sauce.
  5. season again with salt and pepper, and add basil and parsley. mix well.
  6. spoon over rice.
  7. sprinkle with parmesan cheese, and garnish with french-fried onions, if desired.
  8. eat. have seconds.

I make this recipe at least once a week and it is so good! sometimes I add red pepper flakes to give it a little zest, or garlic.
