Simple, off the cuff version, for when I don't feel like peeling, cubing, boiling, and mashing potatoes. Barefoot Contessa it's not, but it's pretty yummy. I know it's yummy when my son eats it quickly.

I make this recipe at least once a week and it is so good! sometimes I add red pepper flakes to give it a little zest, or garlic.
