- 3 large potatoes shopping list
- 2 garlic cloves, chopped finely shopping list
- 3 tablespoons vegetable oil shopping list
- 1 teaspoon sugar shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon paprika or ground annatto seed (you should be able to find annatto at a mexican grocery) shopping list
- corn tortillas shopping list
- 2 tablespoons chopped cilantro shopping list
How to make it
- Peel potatoes and dice into small pieces.
- Sauté the finely chopped garlic in the oil and add some salt, about 1 teaspoon.
- Add the potatoes, sugar, salt and paprika or annatto.
- Cover the pan and cook on low heat, about 20 minutes, adding water as needed to prevent the potatoes from sticking.
- Remove and serve on the corn tortillas, wrapped in foil and warmed in a 200°F oven.
- Top with cilantro, salt, and pepper.
- Sour cream, crema or salsa are also great additions.
