Gallitos De Papa Recipe
A very typical side dish- potatoes cooked and served on corn tortillas, called "gallitos" in Costa Rica. ("Papas" are potatoes).

Ingredients
  • 3 large potatoes
  • 2 garlic cloves, chopped finely
  • 3 tablespoons vegetable oil
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 teaspoon paprika or ground annatto seed (you should be able to find annatto at a mexican grocery)
  • corn tortillas
  • 2 tablespoons chopped cilantro

Directions
  1. Peel potatoes and dice into small pieces.
  2. Sauté the finely chopped garlic in the oil and add some salt, about 1 teaspoon.
  3. Add the potatoes, sugar, salt and paprika or annatto.
  4. Cover the pan and cook on low heat, about 20 minutes, adding water as needed to prevent the potatoes from sticking.
  5. Remove and serve on the corn tortillas, wrapped in foil and warmed in a 200°F oven.
  6. Top with cilantro, salt, and pepper.
  7. Sour cream, crema or salsa are also great additions.
