CARIBBEAN JERK CHICKEN Recipe
Easy and quick grilled chicken. Great weeknight dinner.

Ingredients
  • 2 Tbsp. Mayonnaise
  • 2 Tbsp. Caribbean Jerk seasoning blend
  • 2 Tbsp. soy sauce (LaChoy is wheat free)
  • 4 boneless, skinless chicken breasts (about 1 lb.)

Directions
  1. For marinade, combine mayonnaise, seasoning and soy sauce.
  2. In large, shallow nonaluminum baking dish or plastic bag, pour marinade over chicken.
  3. Cover, or close bag, and marinate in refrigerator, turning occasionally, 30 minutes.
  4. Remove chicken from marinade, discarding marinade.
  5. Grill or broil chicken 12 minutes or until chicken is thoroughly cooked, turning once.

Alterations


Flatten boneless breast with a mallet, the sprinkle with jerk and fry in a skillet with some olive oil. Remove and eat on a Portugese roll loaded with mayo. The oils from the jerk blend into the mayo for one delicious sandwich.
