I am always looking for new recipes to use up my excess garden produce. I came up w/ this to use up eggplant and tomatoes.

Ingredients
- -EGGPLANT SLICES, SALTED AND DRIED, BREADED, AND FRIED.
- -GROUND BEEF, COOKED.
- -SAUCE, HOMEMADE OR JAR.
- -MIREPOIX, COOKED W/ BEEF.
- -RICOTTA CHEESE.
- -MOZZ.
- -PARM/REGG.
Directions
- -LAYER THE FRIED EGGPLANT SLICES W/ THE BEEF.
- -SPREAD ON SOME RICOTTA.
- -SPREAD A LITTLE SAUCE.
- -PUT ON SOME MOZZ.
- -SPREAD ON A LITTLE MORE SAUCE.
- -SPRINKLE ON SOME PARM/REGG.
- -REPEAT.
- BAKE TILL HEATED THROUGH.
