Growing up in a family of 8 we ate a lot of bologna sandwiches. Hadn't eaten one since the early 70's. forgotten how great these things are. Been noticing a huge insurgence in bologna sandwiches in restaurants.

What a trip down memory lane, Sas. We used to have fried bologna sandwiches with the above ingredients - a lot. There was something yummy about that warm fried bologna nestled between those soft squares of white bread with mustard. (Back then I didn't eat mayo too much.)
We even had fried bologna, eggs and toast sometimes for breakfast. We never complained. Yep, you have put that slice(s) in to prevent ending up with a bologna cup. Heh. High 5 from me - thanks for the post and great memories. :) Vickie

So funny!! My mother (a single mom) would stock bologna and boxed noodle dinners for the summer for me and my friends since we were out of school. We use to fry it and loved it. That was in 1985. Wow this brings back memories!! Thanks!!!
