Ingredients
  • WONDERFUL GREEN PEAS and BACON SALAD
  • ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
  • 1 (10 oz.) pkg. frozen small peas (early party peas best)
  • 3- 4 slices of bacon, cooked, drained (very well) and crumbled
  • 1 tart, red-skinned apple
  • 1/4 cup finely chopped celery
  • 1 or 2 green onions, thinly sliced
  • 1/3 cup fresh mushrooms sliced thin
  • 1/2 cup cauliflower, chopped (optional)
  • 1/2 c. sour cream
  • 1/2 - 1 tsp. horseradish
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 2 tsp. lemon juice

Directions
  1. Empty peas from package into colander.
  2. Run hot water over until just thawed.
  3. Rinse in cold water and drain very thoroughly.
  4. Without peeling apple, core and chop.
  5. Combine in bowl drained peas, bacon, chopped apple, celery, and onion.

  7. Dressing:
  8. Combine sour cream, horseradish, salt, pepper, and lemon juice.
  9. Add to salad and mix lightly.
  10. Dressing can be made ahead.
  11. Serve in bowl lined with crisp greens.
  12. (Boston or Bibb lettuce, torn) optional
