How to make it

  • Beat the eggs and sugar until fluffy and very light in color. Add the flour and baking powder gradually while the beater runs slowly, followed by the vanilla and optional cinnamon. Add a little more flour if the dough is sticky.
  • Roll the dough on a lightly floured surface to form logs about 1/2-inch (1 cm) in diameter. Cut into 2-inch (5 cm) lengths and place on greased cookie sheets. Bake in a preheated 350F (180C) oven until lightly browned, 10 to 12 minutes. Cool on wire racks before serving. Makes about 2 dozen.

    As advertised the cookies are soft and chewy and delicious. It's a cakelike cookie instead of a cookielike cookie.

    Made some pictures. Will get them posted in a minute or two.

    They are golden brown on the bottom. I neglected to brush off the extra flour used to roll out the cookie log or they would have browned on top. As it is I added a couple extra minutes to the bake time.

    Love this recipe. Just made them this morning and they are wonderful! I used the almond extract and it really gives the cookie a nice flavor. You've got my ^^55!! :)

    Had a go at these this a.m. Should have halved the recipe because I had to add loads more flour and sugar to what the recipe said to make it 'dough'. The rolls should be thinner and well spaced. Very tasty though! Thanks!
