Halva Cookies

This cookie is a great one for special diets since there's no gluten in it and can be adapted to dairy-free, sugar-free easily, but even those without special diets will love it! Since it's made of tehina (sesame paste) and honey, it tastes like halva, but it's much lighter and gets the seal of approval even from people who don't love halva. Read more For a different taste, replace the tehina with peanut butter! The original recipe (from recipezaar) claims a yield of about 36 cookies with quinoa flakes. I make it with plain quinoa and get about twice that. See less
Ingredients
- 1/2 cup honey shopping list
- 1/3 cup brown sugar shopping list
- 1/2 cup butter or margarine shopping list
- 1/2 cup tehina (or peanut butter) shopping list
- 1-1/2 cup rice flour (or flour of your choice) shopping list
- 7/8 cup quinoa (flakes for lower yield but really light cookies, regular for higher yield and light yet crunchy cookies) shopping list
- 1 teaspoon baking soda shopping list
- 1/4 teaspoon salt shopping list
- 1/2 teaspoon vanilla shopping list
- 1/4 teaspoon cinnamon shopping list
How to make it
- Preheat oven to 350C/180F.
- Combine honey, brown sugar, butter, and tehina/p.b., mix until creamy.
- Add remaining ingredients, mix well
- Spoon teaspoonfuls onto cookie sheets.
- Bake 10-12 minutes, until golden brown.
