  • 1/2 cup honey
  • 1/3 cup brown sugar
  • 1/2 cup butter or margarine
  • 1/2 cup tehina (or peanut butter)
  • 1-1/2 cup rice flour (or flour of your choice)
  • 7/8 cup quinoa (flakes for lower yield but really light cookies, regular for higher yield and light yet crunchy cookies)
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon cinnamon

Directions
  1. Preheat oven to 350C/180F.
  2. Combine honey, brown sugar, butter, and tehina/p.b., mix until creamy.
  3. Add remaining ingredients, mix well
  4. Spoon teaspoonfuls onto cookie sheets.
  5. Bake 10-12 minutes, until golden brown.
