Scarola tiepida con uvetta e pinoli

- 2 lbs Fresh escarole shopping list
- 2 Tblsp toasted pine nuts shopping list
- 2 Tblsp olive oil shopping list
- 2 Tblsp red wine vinegar shopping list
- 1 clove Garlic shopping list
- 2 Tblsp golden raisins shopping list
- salt and pepper to taste shopping list
How to make it
- Thoroughly wash escarole in cold water; tear leaves coarsely
- Steam escarole just until wilted. about 1 to 2 minutes.
- Removed, set aside.
- In a large skillet, saut'e garlic in olive oil.
- Add escarole, raisins, pine nuts, vinegar, salt and pepper; stir to mix well just to warm lightly.
- Serve on individual salad plates.
