How to make it

  • Thoroughly wash escarole in cold water; tear leaves coarsely
  • Steam escarole just until wilted. about 1 to 2 minutes.
  • Removed, set aside.
  • In a large skillet, saut'e garlic in olive oil.
  • Add escarole, raisins, pine nuts, vinegar, salt and pepper; stir to mix well just to warm lightly.
  • Serve on individual salad plates.
