Cranberry Streusel cake

- 3/4 cup brown sugar (packed) shopping list
- 1/2 cup flour shopping list
- 1 tsp cinnamon shopping list
- 1/2 cup butter shopping list
- 1/4 cup water shopping list
- 1 cup sugar shopping list
- 2 eggs shopping list
- 1 tsp vanilla shopping list
- 1 cup sour cream (or sub with fat-free yogurt) shopping list
- 2 cups flour shopping list
- 1 tsp baking powder shopping list
- 1/2 tsp salt shopping list
- Fruit: shopping list
- 2 cups cranberries shopping list
- (optional-- blueberries) shopping list
How to make it
- Streusel mix:
- 3/4 cup brown sugar (packed)
- 1/2 cup flour
- 1 tsp cinnamon
- 1/4 cup butter
- .
- Blend together.
- Set the above mixture aside....
- Batter:
- . Cream together:
- . 1/2 cup butter
- 1 cup sugar
- Beat in:
- 2 eggs
- 1 tsp vanilla
- 1 cup sour cream (or sub with fat-free yogurt)
- Stir in:
- 2 cups flour
- 1 tsp baking powder
- 1/2 tsp salt
- Fruit:
- 2 cups cranberries
- (optional-- blueberries)
- In a greased tube, bundt, or pan of your preference, spread 1/2 the batter.
- Sprinkle half the berries;
- Add half the streusel mix.
- .
- Repeat the same for the second layer....
- Bake @ 350*F approx 1 hour or until done.
- Serve warm or cold-- plain or with ice cream.
