How to make it

  • Char peppers on grill until blackened on all sides
  • Put in paper bag and seal or place in large bowl and cover with plastic wrap
  • Let steam 10 minutes
  • Peel and seed peppers
  • Cut peppers lengthwise slices
  • Put in bowl
  • Mix garlic, sugar, and salt in bowl
  • Stir in vinegar
  • Gradually whisk in oil in slow stream
  • Pour dressing over peppers
  • Refrigerate overnight
  • When serving, put on plate, discarding leftover marinade
  • Salt and pepper and bring to room temp before serving
