How to make it

  • In shallow saucepan, melt the butter over medium heat
  • Add the apple, shallots, garlic, and curry paste
  • Sauté about 3 minutes, or until soft and fragrant
  • Add red pepper and chicken stock
  • Bring mixture to a boil
  • Add turkey and coconut milk
  • Return to a boil
  • Reduce the heat and simmer about 5 minutes
  • Whisk the cornstarch and water together
  • Simmer about 1 minute until thickened
  • Add to the cooked dish and distribute evenly
  • Sprinkle the cilantro over the dish just before serving

    Elain, this Turkey and Apple Curry recipe looks yummy. I usually make curried chicken and apple and we love it. The one change that I make is not because I want to but because I have to. I am allergic to coconut anything so I substitute Carnation Evaporated milk and it does the trick for us. Your recipe is absolutely wonderful Elain and keep them rolling in ;) and I'll be rolling along :D
