This is a great way to use leftover turkey and its stuffing. So good, you'll think you're having Thanksgiving dinner all over again! The dough is PIZZA dough, and is easily and quickly made.

Ingredients
  • Make the pizza dough:
  • 1 pkg bakers yeast
  • 1 ½ cups warm water
  • 1 tsp sugar
  • combine all three ingredients
  • set aside:
  • two cups white flour
  • ½ cup whole wheat flour
  • ½ tsp salt
  • 1 egg
  • ¼ cup canola or olive oil
  • prepare the other ingredients while the yeast bubbles
  • ½ cup cranberry sauce
  • ½ tsp dried oregano
  • 1 cup cooked mashed potatoes
  • 1 ½ cups cooked turkey, chopped
  • 1 ½ cups bread stuffing
  • 3/4 cup shredded provolone cheese
  • 2 tbsp chopped Italian parsley
  • 1 clove garlic, minced
  • salt and pepper to taste

Directions
  1. When yeast is ready, add it to the flour mixture
  2. Add the oil, salt and egg
  3. Combine thoroughly
  4. Turn dough out onto the working surface
  5. Knead 5 minutes
  6. Let dough rest 5 minutes
  7. Roll the dough out into an oblong or rectangular shape
  8. Place this dough onto a large baking sheet lined with parchment paper
  9. Cover with damp cloth until ready to work with
  10. This dough does not need a first rising
  11. Stir together:
  12. Cranberry sauce
  13. Oregano
  14. Spread this on the dough surface, leaving a 2 inch border at the short ends and a 3 inch on the long ends
  15. Sprinkle the mashed potato over this
  16. Preheat oven to 400*F
  17. Combine:
  18. Turkey
  19. Stuffing
  20. Cheese
  21. Parsley
  22. Garlic
  23. Season to taste with salt and pepper
  24. Spread this evenly over the potato layer
  25. To make the braid:
  26. Cut diagonal strips about one inch wide and three inches long on the long sides
  27. Criss-cross these strips over the filling to achieve the braided look
  28. Brush the dough with canola or olive oil
  29. Bake 30 minutes or until golden brown
  30. Let rest 5 minutes before serving
