How to make it

  • Cut lobster meat into bite-size pieces and saute in small amt. of melted butter for about 5 mins. Remove lobster meat and set aside. In same saucepan,make a sauce of 4 Tbs. of melted butter,flour,dry mustard,salt and half of cream. Add lobster to sauce.
  • Break bread into small pieces and add to lobster. Add the rest of the cream,or as much as needed to give medium thickness to the mixture. Add sherry. Mix gently.
  • Place in a pyrex,2qt. casserole dish,cover and refrigerate until ready to bake.
  • Remove casserole from frig. about 1/2 hour before baking. For Topping: Combine crushed ritz crackers in small saute pan with melted butter,remove and spread over top of lobster casserole and sprinkle with paprika and a few dashes of old Bay Seasoning. Bake ,uncovered in preheated 350 degree oven for about 20-25 mins or till bubbly.

    Yummmmy! Makes me miss Maine!!! (I visited family there once, and didn't want to come home!) I have yet to cook a lobster myself, but I will save this recipe because now I have a good reason to!
