How to make it

  • In a large bowl, beat together butter, peanut butter and sugars until fluffy.
  • Beat in egg, vanilla extract and baking soda until well blended.
  • Gently mix in flour just until blended.
  • Cover and chill for 1 hour, or until firm.
  • Preheat oven to 350F.
  • Shape dough into 1" balls, tapering each into a narrow oval.
  • Press flat on one (narrow) side, 2" apart on ungreased cookie sheets.
  • Decorate as mice, using peanut halves for ears and quill candies for eyes.
  • With a toothpick, make a hole about 1/2" deep in the tail ends.
  • Bake 9 minutes
  • Transfer to a cooling rack and immediately insert licorice pieces in tail-holes. I find using a bit of royal icing helps hold them in place.
