Fragrant Honey Cake Recipe
A basic, moist fragrant honey cake, NIce for winter holidays when using candied fruit in recipe or in the fall during apple season when some finely chopped apples may be added instead

Ingredients
  • 6 eggs
  • 1 cup sugar
  • 1 cup honey
  • 2 Tbs oil
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts
  • 1/4 cup chopped citron or mixed candied fruit
  • 1/2 tsp allspice
  • 1 tsp cloves
  • 1/2 tsp cinnamon
  • 2 tsp apricot or plum brandy
  • 1-1/2 tsp baking powder
  • 1 tsp baking soda
  • 3-2/3 cups flour

Directions
  1. Beat the eggs well, add the sugar gradually and continue beating 'til
  2. light.
  3. Stir in the honey, then the rest of the ingredients.
  4. Sift the flour,
  5. baking powder and soda together and add last.
  6. Pour into a paper-lined and oiled pan and sprinkle a few blanched halved almonds on top.
  7. Bake in a 300F oven for one hour. or until tested done
  8. Cover with foil if browning to fast
  9. Invert the pan and allow the cake to cool before removing.
