Fragrant Honey Cake

- 6 eggs shopping list
- 1 cup sugar shopping list
- 1 cup honey shopping list
- 2 Tbs oil shopping list
- 1/2 cup raisins shopping list
- 1/2 cup chopped walnuts shopping list
- 1/4 cup chopped citron or mixed candied fruit shopping list
- 1/2 tsp allspice shopping list
- 1 tsp cloves shopping list
- 1/2 tsp cinnamon shopping list
- 2 tsp apricot or plum brandy shopping list
- 1-1/2 tsp baking powder shopping list
- 1 tsp baking soda shopping list
- 3-2/3 cups flour shopping list
How to make it
- Beat the eggs well, add the sugar gradually and continue beating 'til
- light.
- Stir in the honey, then the rest of the ingredients.
- Sift the flour,
- baking powder and soda together and add last.
- Pour into a paper-lined and oiled pan and sprinkle a few blanched halved almonds on top.
- Bake in a 300F oven for one hour. or until tested done
- Cover with foil if browning to fast
- Invert the pan and allow the cake to cool before removing.

You are absolutely right Midgelet, this is a perfect cake for Fall and Winter. I am setting this recipe aside and from what I have read in the ingredients, it's going to be delicious and a keeper! You've got my "5" forks.
