how to make cornbread from scrach just the way you like it

- for my light and fluffy cornbread: shopping list
- now you must decide if you like it corny or more bread like?? shopping list
- you like it corney? add 2 cup cornmeal to 1cup flour shopping list
- you like it more bread like 1/2 cup cornmeal to 2/1/2 flour shopping list
- 1 tablespoon baking powder shopping list
- 1 tablespoon baking soda shopping list
- you like it sweet? add 3 tablepsoons of sugar shopping list
- 1/1/2 teaspoon salt shopping list
- 2 eggs shopping list
- 1/2 to 1 cup whole milk shopping list
- if you like your light and fluffy cornbread to have holes add tinny cold butter cubes in right befor cooking shopping list
- for a dence and rich cornbread: shopping list
- again decide do you like it corney? 2 cups cornmeal to 1 cup flour shopping list
- or more bread like 1/2 cornmeal to 2/1/2 flour shopping list
- now only use 1/2 teaspoon baking powder shopping list
- no baking soda shopping list
- 2 eggs adn one egg yolk shopping list
- 1/2 cup whole milk or cream shopping list
- 1/2 cup sourcream or few tablespoons buttermilk shopping list
- you can add a 1/4 cup meltes shorting or lard to make it a rich flakey bread shopping list
- also decide if you like it sweet with 3 tablespoons of sugar shopping list
How to make it
- for both light and fluffy and rich and dence you should make up your dry ingredients a day or week befor so the flavors can marry together
- for light and fluffy take your eggs and seperate egg whites from yolkes beat whites until a stiff peak in a large bowl add dry mix with egg yolk and milk start with 1/2 cup add more if looks to be needed
- stir in the egg whites with a folding action to make sure its light add butter cubes now if you like holes always butter your pan glass always has worked best for me bake at 400 for a darker loaf and shorter time at about 20 min or 350 for a light color and even lighter texture for 25 min.
- for your rich and dence cornbread
- add dry ingredients into bowl with eggs and extra yolks add milk and melted shortning or lard mix well add sourcream or buttermilk
- this one you need to bake a low temp 325 for like 30 min to make sure you dont lose all that moisture when you take it out put it on the counter top not a cookie rack like ive seen in the past that will just dry it out
- cornbread is always better with honey butter
- recipe:
- let a stick of butter soften on the counter top or stove top to speed up the melting then stir in 3 tablespoons on honey use a good honey wildflower is my favorite. i love it when thier not all combind but it has huge gobbs of honey in some spots and some just butter spots, oh ya spread this all over your favorite kina cornbread and enjoy!!
