How to make it

  • Bring lg. pot of salted water to a boil over high heat.
  • In small bowl,combine stock,soy sauce,hoisin and soy sauce.
  • Add linguine to boiling water and cook,stirring often for 8-10 mins till tender but still has some bite.
  • Meanwhile,in a large flameproof casserole that will hold the linguine and all the vegetables,heat the oil over med-high heat. Add bok choy stems and cook 2mins,stirring constantly or till stems begin to soften.
  • Add the mushrooms and cook 2 mins,stirring constantly or til edges begin to brown.
  • Ad the peppers,cook 2 mins,stirring constantly or til they begin to soften
  • Add bok-choy leaves,cook 2 mins,stirring often or til vegetables are tender.
  • Stir the chicken stock mixture again. Add it to the vegetables and cook 1-2 mins.stirring,or till sauce thickens.
  • Drain linguine,add to the vegetables and toss to combine.
  • Add the scallions,salt and pepper.
