How to make it

  • Remove pits from dark sweet cherries and put them in a sauce pan with 2 tbsp of sugar, and 2 cups of water.
  • Simmer cherries for 10 minutes then put through fine sieve.
  • Mix the cherry pulp and liquid together into a thin puree, stir in 3 cups of veal stock, and heat again to a boiling point. Turn off! (Do not over cook.)
  • Cut the garnishing cherries into quarters and place on the bottom of 6 tea cups.
  • Pour hot soup over them and top with unsweetened whipped cream.

    This looks very interesting. My Mother-in-law made sour cherry soup which was a recipe from Poland. I am anxious to try your son's idea and see if they are similar. Thanks for sharing with all of us.
