Soup Aux Cerises Sweet Cherry Soup Recipe
This is a sweet meaty tasting soup. My son (the Chef) made it here a few nights ago. I just go the recipe from him. It is different but real good! I do need to start taking photos of all of my recipes.

Ingredients
  • 1 ½ lb. Dark, Sweet Cherries (Reserve 24 of them for garnish)
  • 2 Tbsp Sugar
  • 2 cups hot water
  • 3 cups Veal Stock, Beef Stock, or Pork Stock (your pick)

Directions
  1. Remove pits from dark sweet cherries and put them in a sauce pan with 2 tbsp of sugar, and 2 cups of water.
  2. Simmer cherries for 10 minutes then put through fine sieve.
  3. Mix the cherry pulp and liquid together into a thin puree, stir in 3 cups of veal stock, and heat again to a boiling point. Turn off! (Do not over cook.)
  4. Cut the garnishing cherries into quarters and place on the bottom of 6 tea cups.
  5. Pour hot soup over them and top with unsweetened whipped cream.

This looks very interesting. My Mother-in-law made sour cherry soup which was a recipe from Poland. I am anxious to try your son's idea and see if they are similar. Thanks for sharing with all of us.
