Soup Aux Cerises Sweet Cherry Soup

- 1 ½ lb. Dark, sweet cherries (Reserve 24 of them for garnish) shopping list
- 2 Tbsp sugar shopping list
- 2 cups hot water shopping list
- 3 cups veal stock, beef stock, or pork Stock (your pick) shopping list
How to make it
- Remove pits from dark sweet cherries and put them in a sauce pan with 2 tbsp of sugar, and 2 cups of water.
- Simmer cherries for 10 minutes then put through fine sieve.
- Mix the cherry pulp and liquid together into a thin puree, stir in 3 cups of veal stock, and heat again to a boiling point. Turn off! (Do not over cook.)
- Cut the garnishing cherries into quarters and place on the bottom of 6 tea cups.
- Pour hot soup over them and top with unsweetened whipped cream.
