Pork and Apricot Salad

- 1 cooked pork tenderloin shopping list
- 6 apricots, quartered shopping list
- 1 small red sweet pepper, seeded and diced shopping list
- 1 small spanish onion, halved and thinly sliced shopping list
- ¼ cup toasted slivered almonds shopping list
- 1 tsp curry powder shopping list
- zest and juice of 1 lime shopping list
- pinch of chili powder, or more if you prefer shopping list
- ½ cup plain yogurt shopping list
- salt and pepper shopping list
- 2 tbsp chopped mint shopping list
How to make it
- slice the pork tenderloin and place in a serving bowl
- add the apricots, red pepper, and onion
- add the almonds
- in a small bowl, mix the curry powder, lime zest, lime juice
- add the chili powder to your preferred taste
- stir in the plain yogurt
- pour the yogurt dressing over the mixture, and toss to mix
- season with salt and pepper
- stir in the chopped mint
- cover and refrigerate for at least 1 hour before serving
