Pepper and Olive Salad

- 2 medium red onions chopped shopping list
- 2 red bell peppers cut into bite size pieces shopping list
- 2 green bell peppers cut into bite size pieces shopping list
- 2 yellow bell peppers cut into bite size pieces shopping list
- 2 mild green chilies sliced shopping list
- 7 cloves garlic chopped shopping list
- 6 tablespoons extra virgin olive oil shopping list
- 1/4 teaspoon curry powder shopping list
- 1/4 teaspoon turmeric shopping list
- 1/4 teaspoon dried ginger shopping list
- 1/8 teaspoon ground cardamom shopping list
- 1/2 teaspoon cumin shopping list
- 1-1/4 pounds tomatoes diced shopping list
- 1/4 teaspoon granulated sugar shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 1 medium bottle green pimiento stuffed olives drained shopping list
- 6 tablespoons fresh chopped cilantro shopping list
- juice of 1/2 lemon shopping list
How to make it
- Lightly sauté onions, peppers, chilies and garlic in olive oil 15 minutes stirring occasionally.
- Sprinkle in curry powder and other spices then stir and cook a few minutes to draw out flavors.
- Add tomatoes and continue to cook until thickened.
- Season with sugar, salt and pepper then stir in olives and cilantro.
- Pour lemon juice over and stir gently then chill until ready to serve.
