How to make it

  • Lightly sauté onions, peppers, chilies and garlic in olive oil 15 minutes stirring occasionally.
  • Sprinkle in curry powder and other spices then stir and cook a few minutes to draw out flavors.
  • Add tomatoes and continue to cook until thickened.
  • Season with sugar, salt and pepper then stir in olives and cilantro.
  • Pour lemon juice over and stir gently then chill until ready to serve.
