Caramelized Shallots

- 1/4 cup butter shopping list
- 1 1/4 pound shallots or pearl onions, peeled root ends intact shopping list
- 1 TBSP. superfine sugar shopping list
- 2 TBSP. red or white wine or port shopping list
How to make it
- heat butter in large skillet and add shallots in a single layer
- cook gently, turning occasionally,until the are lightly browned
- sprinkle with sugar.. turning the shallots in the juices until the sugar begins to caramelize
- add the wine and let the mixture bubble for 4 -5 minutes
- add 2/3 cup of water and season with salt and pepper
- cook until the liquid evaporates and the shallots are tender and glazed.
- taste and adjust the seasoning

- these are great served with meat dishes especially beef
