Caramelized Shallots Recipe
this is an easy to do recipe and helps make you meal look extra special..prep time depends on whether you are peeling the shallots or you bought them already peeled

Ingredients
  • 1/4 cup butter
  • 1 1/4 pound shallots or pearl onions, peeled root ends intact
  • 1 TBSP. superfine sugar
  • 2 TBSP. red or white wine or port

Directions
  1. heat butter in large skillet and add shallots in a single layer
  2. cook gently, turning occasionally,until the are lightly browned
  3. sprinkle with sugar.. turning the shallots in the juices until the sugar begins to caramelize
  4. add the wine and let the mixture bubble for 4 -5 minutes
  5. add 2/3 cup of water and season with salt and pepper
  6. cook until the liquid evaporates and the shallots are tender and glazed.
  7. taste and adjust the seasoning
  8. .......................................................
  9. these are great served with meat dishes especially beef
