THESE ARE MY MUCH ASKED FOR, EASY TO MAKE CHICKEN NUGGETS. DIPPED IN RANCH DRESSING INSTEAD OF BUTTERMILK BRINGS A WHOLE NEW ZEST TO THESE LITTLE CRITTERS.

Ingredients
  • 1 LB BONELESS SKINLESS CHICKEN BREASTS
  • 1 1/2 CUPS PANKO BREAD CRUMBS
  • 1/4 TSP PAPRIKA
  • 1 TSP GARLIC POWDER
  • 1 TSP ITALIAN SEASONING
  • SALT AND PEPPER
  • 1/2 CUP CANOLA OIL

Directions
  1. CUT THE CHICKEN UP INTO 2 INCH NUGGETS AND SOAK IN A BOWL OF RANCH DRESSING.
  2. MEANWHILE, IN A SHALLOW BOWL COMBINE PANKO, PAPRIKA, GARLIC POWDER, iTALIAN SEASON, AND SALT AND PEPPER TO TASTE
  3. SET A RACK ON A COOKIE SHEET LINED WITH PAPER TOWELS
  4. HEAT OIL IN A LARGE SKILLET OVER MED HIGH HEAT
  5. LIFT THE NUGGETS OUT OF THE RANCH AND DIP AND ROLL THEM IN THE SEASONED PANKO
  6. GENTLY LAY THE NUGGETS IN OIL AND COOK UNTIL THEY ARE GOLDEN AND JUICES RUN CLEAR, ABOUT 5 MIN PER SIDE
  7. TRANSFER TO RACK TO DRAIN.
