How to make it

  • 1- Heat the oil in a lareg skillet over medium heat, and brown pork on all sides. Mix in onions, and cook and stir until tender.
  • 2- Mix the bananas and tomatoes with juice into the skillet. Bring to a boil, reduce heat to medium low and simmer 30 minutes, stirring occasionally, until pork is very tender. Season with cayenne pepper.
  • 3- Serve over cooked egg noodles.

    Can you make this with frozen bananas? I have about 2 dozen in the freezer (don't ask, hubby came home with 40 lbs of bananas that were being thrown out) I froze them in zipper bags, but NO ONE wants to eat anymore banana bread, banana pancakes, banana smoothies, or even Krum's wonderful cupcakes. So, savory may be my next means of disposal.
