Cuban Goulash

- 1 tbsp. vegetable oil shopping list
- 1 pound boneless pork roast, cubed shopping list
- 1 pound onions, diced shopping list
- 1 pound bananas, peeled and diced shopping list
- 1 (16 oz. ) can diced tomatoes with juice shopping list
- cayenne pepper to taste shopping list
- salt and pepper to taste shopping list
How to make it
- 1- Heat the oil in a lareg skillet over medium heat, and brown pork on all sides. Mix in onions, and cook and stir until tender.
- 2- Mix the bananas and tomatoes with juice into the skillet. Bring to a boil, reduce heat to medium low and simmer 30 minutes, stirring occasionally, until pork is very tender. Season with cayenne pepper.
- 3- Serve over cooked egg noodles.

Can you make this with frozen bananas? I have about 2 dozen in the freezer (don't ask, hubby came home with 40 lbs of bananas that were being thrown out) I froze them in zipper bags, but NO ONE wants to eat anymore banana bread, banana pancakes, ban...more
