Potato and Lamb Moussaka

- 2lbs peeled baking potatoes,cut in 1.4" slices shopping list
- 1c chopped onion(about 1 med) shopping list
- 2 garlic cloves ,chopped shopping list
- 1lb ground lamb shopping list
- 1/2c chopped green pepper shopping list
- 1/2c chopped red bell pepper shopping list
- 1c tomato sauce shopping list
- 1tsp salt shopping list
- 1tsp ground cumin shopping list
- 1/2 tsp black pepper shopping list
- 1/4tsp ground cinnamon shopping list
- 1/2c finely chopped fresh flat-leaf parsley shopping list
- 1c 1% milk shopping list
- 2 lg. eggs,slightly beaten shopping list
How to make it
- Heat a larhe nonstick skillet over med. heat. Coat pan with cooking spray. Add 1/3rd of potato slices to pan;cook 3mins on each side or till lightly browned. Transfer potato to bowl. Repeat procedure with cooking spray and remaining potato slices
- Preheat oven to 350
- Recoat pan with cooking spray. Add onion,garlic and lamb to the pan;cook 3 mins or till lamb begins to brown. Add bell peppers,tomato sauce,salt cumin,black pepper,cinnamon and parsley.;cook 10 mins
- Arrange 1/2 of the potatoes in a 13x9" baking pan coated with spray. Arrange lamb mixture over potatoes;top with remaining potatoes. combine milk and eggs in a small bowl;pour over potato mixture.
- Bake at 350 for 30 mins or till top is golden and set. Remove from oven;let stand 10 mins before serving
- This is a combination of Greek and Armenian cooking!
