How to make it

  • Preheat oven to 350 degrees.
  • Whip the cream cheese until light and fluffy. Place cheese in a ziplock bag, snip the corner off the bag and set aside.
  • Sift all the dry ingredients together. Make a well in the center.
  • Blend the butter, oil, milk and eggs together.
  • Fold the wet and dry ingredients together.
  • Spoon the batter into paper-lined muffin tins.
  • Place one or two berries in the center of each muffin.
  • Squeeze about 1 tablespoon of cream cheese into the muffin batter, on top of the strawberries.
  • Bake for 30 to 40 minutes. If you test the muffin with a toothpick, do not test directly in the center. Test about 1/2 inch from the edge.
  • NOTE: You can omit the strawberries and replace with 8 ounces of blueberries, raspberries, chocolate chips, nuts, or anything you choose.
