Chocolate Pecan Cake

- 1 cup butter shopping list
- 2 cups sugar shopping list
- 3 eggs shopping list
- 1/2 cup cocoa shopping list
- 1/2 cup hot water shopping list
- 1 cup boiling coffee shopping list
- 1 teasp. vanilla shopping list
- 3 cups flour shopping list
- 1 teasp. baking soda shopping list
- 1/2 teasp. salt shopping list
- 1 cup finely pecans shopping list
How to make it
- preheat oven to 350" F
- in large mixing bowl ....cream butter and sugar until fluffy
- add eggs and beat until smooth
- in small bowl.... dissolve cocoa in hot water
- add cocoa, coffee and vanilla to creamed mixture and mix well
- in large bowl sift together flour, baking soda and salt
- add flour mixture to creamed mixture beating until smooth
- fold in pecans
- pour batter into 3 greased and floured 9-inch round cake pans
- bake 25 - 30 minutes or until a toothpick inserted into middle of the cake comes out clean
- cool in pan for 10 minutes
- turn onto a wire rack to completely cool...
