Eggplant Tomato Stack Recipe

	Peetabear / All my dishes 3 months ago I came up with this one night when I wanted eggplant parm... but was just too tired to make it...add spices to suit your taste. cooking time is approx. Prep:15m Cook:30m Servings:0	Peetabear

Ingredients

eggplant cut into slices

fresh ripe large tomatoes

fresh basil leaves

herbs of your choice

garlic

mozzarella

Directions

cut nice 1/2 -1-inch slices of eggplant

put on a baking sheet

rub a little olive oil on them

rub some garlic on them

pop them into a 400' oven

when they are tender

add to each ..spices of choice, a thick slice of tomato, a basil leaf and a thick slice of mozzarella

pop back in the oven until the tomato is warmed through and the mozzarella is melted..
