Eggplant Tomato Stack Recipe

Ingredients

How to make it

  • cut nice 1/2 -1-inch slices of eggplant
  • put on a baking sheet
  • rub a little olive oil on them
  • rub some garlic on them
  • pop them into a 400' oven
  • when they are tender
  • add to each ..spices of choice, a thick slice of tomato, a basil leaf and a thick slice of mozzarella
  • pop back in the oven until the tomato is warmed through and the mozzarella is melted..

    GIRRRLL! these were GREAT! it's a hoot how i actually fixed them though. of course, after a crazy day, i started in the kitchen throwing together some homemade spaghetti sauce. i thought i'd make your stacks for a side dish but, of course, didn't look up the recipe. you would have died! i steamed the eggplant instead of baking them, obviously confusing that part w/ another fav eggplant recipe, and the beat goes on! i did remember all of the ingredients though and the dish was absolutely YUMMM! these are awesome and easy -- a great dish for beginners, too. CAPITAL 5 FORKS from us!

    hey, peeta! these sound great! we're growing japanese eggplant this year and need to COOK some! i've got a fresh ball of mozz in fridge and fresh basil in herb garden. tomatoes are ripening quickly, too --- these babies will be in my oven 2nite - thanks for the great recipe, as always! one word, really -- YUMMM! <3 deb

    Quick and very yummy. Love the idea of eggplant as a base for a modified version of caprese. Will definitely try.
