Eggplant Tomato Stack Recipe
I came up with this one night when I wanted eggplant parm... but was just too tired to make it...add spices to suit your taste. cooking time is approx.

Ingredients
  • eggplant cut into slices
  • fresh ripe large tomatoes
  • fresh basil leaves
  • herbs of your choice
  • garlic
  • mozzarella

Directions
  1. cut nice 1/2 -1-inch slices of eggplant
  2. put on a baking sheet
  3. rub a little olive oil on them
  4. rub some garlic on them
  5. pop them into a 400' oven
  6. when they are tender
  7. add to each ..spices of choice, a thick slice of tomato, a basil leaf and a thick slice of mozzarella
  8. pop back in the oven until the tomato is warmed through and the mozzarella is melted..

Quick and very yummy. Love the idea of eggplant as a base for a modified version of caprese. Will definitely try.
