Tea And Sympathy Oven BBQ St Louis Ribs Recipe

Ingredients
  • 2 slabs St. Louis style ribs, outer membrane removed, cut in 2 pieces.
  • Rub.
  • 3 T. brown sugar
  • 1 ½ T. chili powder
  • ½ t. cayenne
  • 4 T. hot & sweet mustard
  • 4 T. ketchup
  • 1 t. hickory flavored salt
  • 10 Lapsang Souchong tea bags
  • ½ c. dark beer, or apple juice

Directions
  1. Rub ribs with dry ingredients and then cover with ketchup and mustard. Cover with plastic wrap and refrigerate 12-24 hours.
  2. Preheat oven to 500 degrees for 45 minutes. Use oven stone for additional heat. Freeze ribs for 45 minutes.
  3. Use roasting pan with rack. Place the contents of 10 Lapsang Souchong teabags to bottom. Roast tightly covered with heavy duty aluminum wrap for 30 minutes.
  4. Bring heat down to 250 degrees. Add ½ cup apple juice or dark beer to bottom of pan and recover ribs tightly. Roast for 1 ½ hours until ribs are soft.
  5. Broil ribs uncovered 5-8 minutes per side to crisp.
  6. Serve plain or with barbecue sauce.
