How to make it

  • wash potatoes and wrap in aluminum foil
  • bake in oven 1 hour at 350 degrees
  • once potatoes are tender slice lengthwise in half
  • scoop out the center and keep the skins
  • put the center in a large mixing bowl
  • using a mixer beat in all ingredients except for half the cheese and half the chives until blended
  • put mixture back into the skins
  • top with remaining cheese and chives and bake in oven 10 mins or until the cheese melts
